Keto Cottage Cheese Chocolate Chip Cookies

Ingredients

1/2 cup cottage cheese 1 cup almond flour 1/4 cup keto sweetener 1/4 cup sugar-free chocolate chips

Instructions

Preheat oven to 350°F (175°C) and line a tray with parchment paper. This prevents sticking and helps the cookies bake evenly with a nice golden edge.

Blend cottage cheese until smooth. This removes lumps and creates a creamy base. You can use a blender or mash well with a fork for a smoother texture.

In a bowl, mix almond flour and sweetener. Then, add the blended cottage cheese. Stir until a sticky dough forms, smooth and ready to hold chips.

Fold in chocolate chips gently, making sure they are evenly spread in the dough. These add sweet bites and balance the tang from cottage cheese.

Scoop dough onto tray into cookie shapes. Flatten a little with a spoon. Leave space between each one to allow spreading while baking in the oven.

Bake for 12–14 mins until golden. Let them cool fully to firm up. They’ll be soft at first but set well, offering a chewy, creamy cookie texture. Enjoy!
