1/2 ripe banana (mashed) 3 tbsp almond flour 1 tbsp maple syrup or honey 1/4 tsp baking powder 1/4 tsp cinnamon Pinch of salt
Mash the banana well in a microwave-safe mug using a fork. Make sure there are no lumps so the cake texture turns out smooth and moist after cooking.
Add maple syrup, almond flour, cinnamon, baking powder, and salt. Stir until smooth and well combined. The batter should look thick but pourable.
Tap the mug gently to remove air bubbles. This helps the cake rise evenly in the microwave and prevents a soggy or sunken middle after it sets.
Microwave on high for 90 seconds to 2 minutes. The top should look set, and the mug cake should pull slightly away from the edges when it’s done.
Let it cool for 1–2 minutes before eating. The texture becomes more bread-like as it sits. You can top it with nuts, yogurt, or nut butter if desired.
