Low Carb Keto Soft Pretzel Bites

Ingredients

1 1/2 cups shredded mozzarella 2 oz cream cheese 1 cup almond flour 1 egg (for dough) 1 tsp baking powder 1 egg (for egg wash) Coarse salt for topping

Instructions

Melt mozzarella and cream cheese together in the microwave for 1 minute. Stir well until smooth and stretchy. This forms the cheesy fathead dough base.

Add almond flour, baking powder, and one egg. Mix until a soft dough forms. If sticky, wet your hands to knead and shape. Chill for 5 minutes if needed.

Divide dough into small pieces and roll into bite-size balls. Try to keep them uniform so they bake evenly. You’ll get about 20–24 pretzel bites.

Place bites on a lined baking sheet. Brush with beaten egg for shine. Sprinkle coarse salt on top. This gives that classic pretzel look and flavor.

Bake at 400°F (200°C) for 10–12 minutes until golden. Keep an eye on them so they don’t overbrown. They should puff up slightly and be soft inside.

Let cool slightly before serving. Enjoy with mustard or keto cheese dip. These are chewy, golden, and perfect as a snack or party appetizer!
